Ironbark is arguably the main wood used and preferred by BBQers in Australia. It is especially favoured by those cooking in stick/log burning offset smokers and those doing long cooks with dark meats.

The long burn time, high heat generated by its coals and it’s strong, flavoursome smoke are the medley which creates the perfect Australian hardwood to cook American style BBQ!

Ours wood is particularly special and is regarded as the best in Australia by many leading chefs in Sydney, Melbourne, Canberra and Adelaide.

Grown inland in dry conditions, it is an old and solid wood, having grown very slowly, compared to Ironbark grown near the coast in salty conditions, which tends to smolder and contain little heat in comparison.
